Sichuan food - what the hell is that?

Sichuan (四川,Four Rivers) is a province in China known for its chillies, peppercorns and for having the best food in the world hands down. It's even healthy, but don't let that put you off!
Through this book of recipes full of photos and anecdotes from my life in China, you can learn the basics of Chinese cooking in general. Sichuan cooking is a science but it's not set in stone. Feel free to tweak the recipes to suit your taste. For example, I use twice as much garlic as it says, and often use ground beef or chicken instead of pork.
This is a kind of cooking where it's really easy to impress people. The ingredients are readily available, and I have added photos of all the "strange" ones like vinegar and Chinese rice wine.
